YOU KNOW IT'S SUMMER : PART TWO

THIS IS THE CATCH FROM A RECENT MORNING TRIP ON JAMAICA BAY. 
(JAMAICA BAY IS RIGHT OFF JFK AIRPORT IN NYC AND A PROLIFIC FISHERY. LITERALLY A 20 MINUTE RIDE FROM MY HOUSE IN BROOKLYN) THERE WERE NOT MANY STRIPERS ( AFTER A FULL MOON THE NIGHT BEFORE THERE WAS A LOT OF ALL NIGHT FEEDING GOING ON ) BUT WE MANAGED TO LAND THESE BLUE FISH (CALLED "GREASERS" BY A BUDDY OF MINE BECAUSE OF THEIR OILY REPUTATION) I LOVE THESE FISH. I KNOW THEY DON'T HAVE THE APPEAL OF THE REGAL STRIPER BUT, THESE BLUES ARE AGGRESSIVE EATERS, HARD FIGHTERS AND WHEN EATEN PROMPTLY - DELICIOUS! THE BIG BOY ON TOP WAS STUFFED WITH OREGANO, ONION AND SORREL FROM THE GARDEN IN BROOKLYN. DRIZZLED WITH GOOD OLIVE OIL, HEAVILY SALTED, DRESSED WITH MORE SORREL AND BAKED. THE SMALLER GUYS WERE FILLETED AND TURNED INTO CEVICHE. I FINISHED THE DISH WITH COCONUT MILK, TO CUT THE CHARACTERISTIC OILY RICH TASTE AND TO ADD A LITTLE SOMETHING I LEARNED FROM EATING CEVICHE IN THE SOUTH PACIFIC.
